Culinary or Ceremonial?

Deep in the country, away from fishing towns and quiet cities, verdant hills roll beneath acres of sprouting stalks.  The leaves weave green fields from fertile land and a month prior to harvest, a wooden framework goes up and burlap layers are piled on top.  An ever-present dusk settles in the shade and the true matcha process begins. The finest quality matcha is Ceremonial grade, made from the highest leaves on the tea plant called the first flush--the leaves are fresh, young, light, and sweet.  Our CoffeeeHouse Ceremonial Blend is made from the first flush.  Hand-picked and freshly ground into a vibrant emerald green, try a 1/2 teaspoon, 8oz of water, and a smattering of ice cubes;  try a 1/2...

Wand, Whisk, or Something Else?

Let’s take a look at the many ways we can prepare a matcha shot. The traditional, perhaps best, is with a Chasen. That’s the handmade, 100-prong bamboo whisk we provide. Matcha + Honey!

For over 5,000 years, all around the world, honey has been used for its nutritional and medicinal qualities.  Combine it with matcha and it's an absolute win-win.  The health benefits go through the roof and we set records on the Tastebud Happiness Index (this is not a real thing, but if it was, we would be winning).  We source a pure, dehydrated honey; we then pulverize it and sift it into our Premium House Matcha.  The result is a beautiful vibrant green matcha blend that dissolves entirely into your base (water, milk, etc).  Thanks to the simple ingredients, our Matcha+Honey is low in calories (15 per serving vs. others with up to 75), packed with health benefits, and allows the...

Matcha and Wine - More similar than you may think

A nice bottle of wine is a common accompaniment to a special dinner party. But before the party, you must select the perfect bottle. And before that bottle exists, much time and expertise were put into finding the right combination of grapes — taking into account soil conditions, climate, altitude etc. A well-trained sommelier can taste the time of year the grape was harvested and pinpoint its growth location. But wine isn’t the only product that receives such special treatment.  In Japan, a very similar process is done for all of our matcha. A matcha sommelier uses their expertise — lending back generations, to select the perfect group of leaves to create an intentional taste, an intentional experience. Creating a...
