Organic matcha is grown using USDA certified organic farming practices, while Traditional matcha follows time-honored Japanese cultivation methods that focus on flavor, texture, and vibrant color. Both are high quality, but Traditional matcha tends to have a smoother, more complex taste. Both have to pass the JAS (Japanese Agricultural Standard).
